Egg Fried Rice
Spicy egg fried rice is a variation to the basic Chinese style egg fried rice. Just like any other fried rice recipes, the flavor, taste and nutrition are best with the use of onions, cabbage and carrot. But feel free to skip whatever you don’t have and it’s still going to taste good.
You just need very few ingredients like eggs, cooked rice and sauce to make this delicious recipe which is very quick, easy and an instant recipe. Egg fried rice is a fried rice recipe made using scrambled eggs and rice. The rice is nicely fried with eggs and some veggies.
Ingredients required:
• Eggs – 4
• Cooked rice – 2 cups
• Onion – 1 (finely chopped)
• Grated cabbage – ½ cup
• Red chili powder – pinch
• Grated carrot – ¼ kg
• Green chilies – 3(chopped into small size)
• Garlic – 1 tablespoon(finely chopped)
• Ginger – 1 tablespoon (finely chopped)
• Vinegar – 1 tablespoon
• Black pepper powder – 1 tablespoon
• Oil – 2 tablespoons
• Salt as per taste
• Ajinomoto – 1 pinch
• Soya sauce – 1 tablespoon
• Turmeric powder – 1pinch
Preparation method:
In a bowl, beat four eggs.
Add salt as per taste, red chili powder (pinch) and black pepper powder (1 tablespoon) beat the mixture well.
Heat a pan with oil, add chopped garlic, ginger and green chilies.
Fry them for a minute.
Then add chopped onions and mix it.
Now add grated cabbage and carrot mix them and cover the pan with a lid for a minute.
Then add turmeric powder (1 pinch) and mix it well.
Into it, add the beaten eggs.
Let them cook for few minutes.
Scramble the eggs completely and cook until they are perfectly done.
Furthermore, add cooked rice and sauté well for 2-3 minutes on medium flame.
Now add salt as per taste, black pepper powder (½ tablespoon), a pinch of Ajinomoto and mix together.
Lastly add vinegar (1tablespoon) and soya sauce (1 tablespoon) then mix up well.
Sauté for 2 minutes.
Now switch off the stove and transfer the fried egg rice to a serving bowl.
Garnish with some spring onions and coriander leaves.
Tasty and spicy egg fried rice is ready now
Serve hot with gravy of your choice
Note:
• If basmati rice is used, soak 2 cups of basmati rice for about 30 minutes and then cook the rice.
